A Most Unusual Vegetable

At the co-op yesterday, I saw the strangest looking “vegetable”, really it is an edible green plant. It is supposed to be a delight and is available only a few short weeks; “it” being the Fiddlehead Fern. The plant looked odd. Now, let it be known that I am not veggie shy! I love vegetables, all types and I have completely overcome my childhood dislike of spinach. Still I have to admit I was not feeling adventurous enough to try this. Apparently they are a delicacy in Maine. Yum. I passed.

These plants have probably been on the earth since the time of the dinosaurs. If you should stumble on this plant at a market, you are now at least semi-prepared. You might want to give them a try. The season for the little fern is short…but we can all be ready in 2009! The Brooklyn Botanic Garden has a good write up on the plant.
